Pork tenderloin is one of the most loved main courses in our dinner rotation. We have it at least every other week. I will buy then in bulk when they are on sale and throw them in the freezer. This is an easy grilled marinated version that is quick and flavorful.
To make this you will need:
1 – 2lbspork tenderloin
Marinade:
1/4cupcanola oil
1/4cupapple cider
1/4cupdark brown sugar
2 tablespoonsDijon Mustard
1large lime – juice only
2large garlic cloves, minced
Mix together the marinade first in a bowl.
Place the marinade mix in a bag and try to get rid of as much air as you can before you seal. Place in the fridge for an hour or more.
Spray grate and grill at medium high until internal temperature reaches 145 degrees. This took about 4 turns and 12 minutes for this 1.15 pounder on my grill. If you don’t have a probed meat thermometer, they are totally worth it. Just set the temperature and it will tell you when the meat is done.
We like to serve this with a side cabbage salad with poppyseed dressing and sweet cubed sweet potatoes, roasted in foil on the grill. Enjoy!
On a side note, isn’t this a pretty view through a cabbage?
