Chicken Salad with Grapes

It’s pretty hard for me to resist a hot, fresh store-roasted chicken if I’m shopping on a late Saturday morning.  The Pete’s Fresh Market sells them perfectly seasoned for $5 a chicken.  Chicken salad is my favorite thing to make with this if we’re not devouring it for an immediate meal.

Chicken Salad Ingredients

The chicken salad our family likes includes the ingredients above.  The listing:

  • 2.5 cups cooked, chopped chicken
  • 1/2 cup chopped celery
  • 3/4 cup red seedless grapes halved
  • 2/3 cup mayonnaise or Greek Yogurt
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Mix everything together and you can store it in the fridge for up to a couple days.  It doesn’t last that long in our home.
