Instant Pot Egg Bites

We are new converts to the Instant Pot.  It was an impulse buy on a Costco run that was then handed to my husband to give to me as a birthday gift a few weeks later.  I was an instant believer and may need to retire my slow cooker.  When I discovered you can make egg bites like my Starbucks favorites in the Instant Pot, it became an early almost weekly favorite for our new toy.

Egg Bite ingredients

I liked to order the bacon and gruyere variety at Starbucks, and have made that version too, but more often we have ham and cheese available, so that’s what we used for these.  You will need the ingredients in the photo above.  

  • 5 eggs
  • 2-3 slides of deli ham, cut into small pieces
  • 1/4 cup sharp cheddar cheese, shredded
  • 5 tablespoons milk
  • salt and pepper to taste (about 5 cranks of the pepper mill for me and 4 shakes of the salt shaker)

Wisk together the eggs, then add milk and salt and pepper.  At this point I like to transfer the egg mixture to a container that allows for easy pouring, such as a glass measuring cup. 

You’ll need to have an egg bit mold to make this dish.  I spent $8 on this one on amazon, and I’ve more than gotten my money’s worth.  

 

Egg Bite Cover

It’s very important to spray the mold before you pour the egg mixture in.  Distribute egg mixture evenly throughout the cups.  Next, evenly distribute the shredded cheese and ham between the cups.  Place a cover on the eggs and place into the Instant Pot on the elevated metal tray.

Fill the instant pot with 1 cup of water, then place the egg mold on a tray in the instant pot.  Secure the lid and make sure the pressure valve is set to sealed. Select Manual (high pressure) with a cook time of 9 minutes. When the cook time ends, allow to naturally release for another 9 minutes. 

When the eggs have cooled, place a plate on top of the mold and flip it all over and push the eggs out of the mold onto the plate.

This is a nice, light breakfast.  I like to serve with a fruit or two and a cup of tea.
