Meatloaf is a winter food in our house. The oven time and hearty goodness means it’s a cold day craving. We use an old-school recipe.
The ingredients above are what you will need (plus 3 cloves of garlic). Here is the listing:
For the Meatloaf:
2 eggs
1 cup bread crumbs
1 onion, chopped small
1 red pepper, chopped small
2 lbs lean hamburger
1/2 cup milk
1 teaspoon salt
1 teaspoon pepper
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon tomato paste
3 teaspoons minced garlic
1 teaspoon garlic powder
For the Sauce:
1/2 cup ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
You’ll likely need to use a food processor on the bread. I used sweet rolls this time because they were on hand. You can also use 3/4 cups panko crumbs. Dump all the meatloaf ingredients into a big bowl and mix with a spoon or by hand.
We always use our hands to mix. It looks like this after mixing. At this point, you will look for a bread pan that will fit the mixture. Spray the pan or line it in parchment paper and place the mixture evenly in the pan. Bake at 400 degrees until the internal temperature reaches 160 degrees. This took about 45 minutes in my oven. As the meat is in the oven, make the sauce. Place about half the sauce mixture on top of the meatloaf about halfway through cooking. Place the other half on top about 10 minute before the meat is done.
We typically serve with garlic mashed potatoes and a side salad. Enjoy!
