These are great for a quick breakfast during the work/school week. The oatmeal cups are stored in the freezer and microwaved for 2 minutes. A quick and healthy breakfast!
Ingredients:
5 cups water
1/2 tsp salt
2 cups oats
1/3 cup packed brown sugar
1 tbsp butter
1 tsp ground cinnamon (optional)
1/2 cup raisins
1 cup fresh berries
In a medium saucepan, bring the water and salt to boiling, then stir in oats. Cook 5 minutes, stirring occasionally. Remove from heat. Stir in brown sugar, butter, and cinnamon (if using). Cover and chill. Stir in dried fruit.
Grease (18) muffin cups. Fill about 3/4 full.
Press the fruits into the cups next. Place the cupcake tins into a freezer and freeze 6 hours.
When you pull the cups out of the freezer, let stand about 5 minutes before removing from the muffin tins.
Store frozen oatmeal cups in an airtight bag or container in the freezer. Freeze up to 3 months.
To serve, in a small bowl microwave one frozen oatmeal cup at a time, covered, 2 minutes or until heated through, stirring once. Stir again before serving and add milk or substitute if desired. Makes 18 servings. Enjoy!
