This is our favorite use for the leftovers from this marinated flank steak recipe. With the addition of the flank steak, it’s a main course sort of a salad.
Salad Components (1 person serving):
1-1/2 cups spinach/baby kale mix
4 ounces sliced, cold flank steak
1 ounce goat cheese
1/8 cup diced tomatoes
1 diced date
2 teaspoons hemp seeds
Place greens in a bowl and mix with salad dressing. We like to make our own. Layer on the other salad ingredients, with the steaks on top. If you reserve sauce from the flank steak, that is great on top of the meat as well. Enjoy!
