Sweet Protein Kale and Spinach Salad This salad offers a little more protein if consuming as a meal, or when used as a side on a meatless night. The following ingredients are used for a 4 person side serving:3 cups spinach/baby kale grocery store bagged greens2 hard boiled eggs, cut into about 20 pieces each4 large dates, cut into small pieces3 tablespoons pepitas (pumpkin seeds)1 tablespoon hemp seeds We like to use this dressing on this salad. This dressing can be made ahead and will last for a week in your fridge.
