Sweet Protein Kale and Spinach Salad

This salad offers a little more protein if consuming as a meal, or when used as a side on a meatless night.

Sweet protein kale spinach

The following ingredients are used for a 4 person side serving:

  • 3 cups spinach/baby kale grocery store bagged greens
  • 2 hard boiled eggs, cut into about 20 pieces each
  • 4 large dates, cut into small pieces
  • 3 tablespoons pepitas (pumpkin seeds)
  • 1 tablespoon hemp seeds

We like to use this dressing on this salad.  This dressing can be made ahead and will last for a week in your fridge.
