Salad Dressing

I started binging on Jacques Pepin mini videos during quarantine.  Jacque taught me I should never need to buy salad dressing again, and he was right.  We like this dressing combo to make ahead and use on our salads during the week.  It’s basically what Jacques says, plus some sugar.

Salad Dressing Ingredients

Jacques’ rule is 1/3 vinegar vs 2/3 olive oil.  Here is my listing of ingredients:

  • 1/4 cup red wine vinegar
  • 3/4 cup olive oil
  • 2 tablespoons dijon mustard
  • 1/2 shallot, minced
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
Salad dressing unmixed

Mix all the ingredients and place them into a mason jar. The unmixed version will look like the above.

 

Salad Dressing mixed

The mixed version looks like the above.  Jacque recommends that the dressing not be fully mixed and that the salad should be mixed throughly after dressing is added so that every last green leaf glistens.
