Gnocchi with Spinach and Sausage

This dish is one of our family’s favorites.  We eat it about once a month.  We aren’t averse to sausage, but I do like to stock up on the organic chicken variety at Whole Foods, and this is almost always in our freezer.  We use either store bought potato gnocchi, or we make our own simple gnocchi.

Gnocchi Sausage Ingredients

Ingredients include:

  • 2 cups spinach
  • 1 package sausage of your choice
  • 1 medium onion, diced
  • 2 large cloves of garlic, minced
  • 1/2 cup parmesan cheese, grated
  • salt and pepper to taste (about 1/4 teaspoon each, plus extra)
  • gnocchi of your choice

Start by dicing the onion and cooking for 5 minutes in 1 tablespoon of olive oil in a medium high pan.

Gnocchi Sausage

Once the onions are softened after 5 minutes of frying, add the package of sausage and cook until browned.  In the last few minutes, add the two cloves of garlic, minced.

Next, add the 2 cups of spinach along with 1/4 cup of reserved water from boiling the gnocchi.  The spinach will crowd your pan, so you may want to phase it by cooking down one cup at a time.  Stir spinach under until wilted and reduced.

The reduced spinach will start to look like this.  At this point, add salt and pepper and continue to stir through.

Next, add cooked gnocchi and parmesan cheese and stir threw.

Add additional parmesan cheese when serving, as well as fresh ground pepper and top with basil chiffonade, if available.  Enjoy!
