Mini sockeye salmon bagels are one of my favorite quick breakfasts. In the time it takes to toast a bagel, you can have a delicious breakfast ready to eat.
My favorite variation of this dish includes the following ingredients:
mini bagel
cream cheese
arugula/spinach salad mix
smoked sockeye salmon
red onion slices
salt
pepper
Just toast the mini bagel on a low/medium setting, then layer with a thin coating of cream cheese. I usually use whipped, but we were out on this day.
Layer greens over the cream cheese, then top with the smoked salmon. I separate the salmon layers to the thinnest layer and spread so it’s about one even layer across the top.
Top with thin slices of red onion, and sprinkle with salt and pepper. I like to pair with a breakfast green salad with olive oil and lemon and a hard boiled egg. The onions mean I won’t be kissing my husband for a while, but they are such a nice add for me I can’t resist. Enjoy!
