It’s pretty hard for me to resist a hot, fresh store-roasted chicken if I’m shopping on a late Saturday morning. The Pete’s Fresh Market sells them perfectly seasoned for $5 a chicken. Chicken salad is my favorite thing to make with this if we’re not devouring it for an immediate meal.
The chicken salad our family likes includes the ingredients above. The listing:
2.5cupscooked, chopped chicken
1/2cupchopped celery
3/4cupred seedless grapeshalved
2/3cupmayonnaiseor Greek Yogurt
1 tablespoon dijon mustard
1/2teaspoonsalt
1/2teaspoonground black pepper
Mix everything together and you can store it in the fridge for up to a couple days. It doesn’t last that long in our home.
We typically eat chicken salad on a bed of greens with a side salad and slices of fresh baguette. Enjoy!
