Tacos – what a perfect meal. Wrap them in flour or corn tortillas or lettuce wraps. Learn to make crema and you’re set. Make them as light or as heavy as you desire.
To me, tacos are wonderful leftover, so for our family of four, I typically double the recipe. Look at all these beautiful colors – who wouldn’t want more!

And the crema? Mix 1/2 cup sour cream, plus juice of one lime and some chopped cilantro. Add red pepper flakes, salt, pepper, to your taste.
Place onions and peppers in pan and fry for 10 minutes.
Add beef and bison as well as taco seasoning. Break apart meat and continue to stir until browned.
When browned, the meat is ready to create some tacos.

No one can tell you how to make your taco – your taco is all about your preference. This one is mine. No cheese, max avocado, max crema, max cilantro, max lime. So yum. Enjoy!
