We love banana bread in our house. Truly, I sometimes wonder if other families get so excited when they find they have brown bananas? Apple bread is a more seasonal choice in our house in the fall when we have bags of apples from the orchard. The thin cut apple slices melt into the bread and the brown sugar and cinnamon layers back to a crispy delicious layer and topping.
To make apple bread, you’ll start with the ingredients above. Specifically, you’ll need the following:
½ cup packed light brown sugar
1 ½ teaspoon ground cinnamon
⅔ cup white sugar
½ cup unsalted butter, softened
2 eggs
2 teaspoons vanilla extract
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ cup milk
1 large apple, peeled and finely chopped
Mix together the brown sugar and the cinnamon and set aside.
In a mixer or bowl, mix together the sugar and softened butter.
When the butter and sugar are creamed, add in the eggs and vanilla and mix for 1 minute. When the batter is incorporated, mix in the flour, baking powder and finally the milk.
Spread half of the batter into the prepared pan. Take half the thin sliced/diced apples and spread on top of the batter layer.
Spread half the cinnamon/brown sugar mix as the next layer.
Repeat the layers: the rest of the batter, then the rest of the apple slices, then the rest of the cinnamon/brown sugar mix.
Use the back of a spoon to pat the final layer into the batter. Place the pan in a 350 degree over for 45-50 minutes.
Let the loaf cool for about 10 minutes before pulling it out of the pan.
